Chipotle Lime Grilled Corn Salad
6-8 ears corn grilled with CornStar Chipotle Lime
4 cans black beans, drained and rinsed
1 red bell pepper, chopped
2 green bell peppers, chopped
1 medium red onion, chopped
1 bunch cilantro, chopped
1/2 cup lime juice
1 jalapeno or poblano pepper, chopped (optional)
Remove kernels from corn with a knife. Combine all ingredients in a large bowl and season with lime juice to taste. Serve as a side dish, salad, or with tortilla chips as a salsa. A great way to use leftover ears of corn!

Elote Grilled Chicken Salad
3 lbs grilled chicken breast, chopped or shredded
2 cups celery, chopped
1 cup green onions, sliced
2 cups red bell pepper, chopped
2 packets CornStar Elote
Salt and pepper to taste
Combine all the ingredients in a large bowl. Chill for 2 hourse before serving. Serve with crackers or on a sandwich.

Chipotle Lime Corn and Black Bean Salad
8 ears of sweet corn (ex. Silver Queen, Chantilly, etc.)
1 pkg CornStar Chipotle Lime
4 15oz. cans black beans, drained
1 red bell pepper, diced
2 green bell peppers, diced
1 jalapeno, diced (optional)
1 bunch of cilantro, chopped
1/2 cup lime juice
1 medium red onion, diced
Shuck and clean the corn. Grill the corn over medium high heat basting the corn with CornStar Chipotle Lime. Once the corn reaches a nice golden brown, remove from the heat and cool to the touch. Remove the corn from the cob. Should yield 4 to 5 cups of kernals. Mix all the ingredients in a large bowl. Chill for 2 hours before serving.

Elote Spinach and Artichoke Dip
1 pkg CornStar Elote
2 cans artichoke hearts, quartered
1 cup frozen spinach, chopped
6 oz cream cheese, softened
1/4 cup sour cream
Mix all ingredients in a large bowl. Spread into an ungreased pan. Bake for 30 minutes at 350 degrees. Serve warm on your favorite cracker or toasted baguette rounds.

Chipotle Lime Grilled Cheese
14 slices favorite bread (Recommend: Artisanal Bread)
14 slices cheese (Recommend: Aged White Cheddar)
1 pkg CornStar Chipotle Lime
Spread CornStar Chipotle Lime on one side of each piece of bread. Place two pieces of cheese between the bread with the CornStar side out. Cook in a skillet on medium high. Flip after 3 minutes. Continue cooking until the bread is toasted. Serve with your favorite Tomato Soup.

Smokey Sweet - Sweet Potato Casserole
1 pkg CornStar Smokey Sweet
12 sweet potatoes
Wash and wrap the sweet potatoes individually in aluminum foil. Bake in the oven for 1 to 1 1/2 hours at 400 degrees. Let them cool for about 10 minutes and then remove the skin. Place the skinned potatoes in a large mixing bowl and add the CornStar Smokey Sweet. Mix them until smooth. Place in a casserole dish and place back in the oven for 15 minutes at 350 degrees.
